Fish D'vine is now offering a high quaility seafood provisioning service to super yachts , Bareboats, Hamilton Island residents and guests and Airlie Beach residents and visitors with door to door delivery.

Prices will vary subject to supply and any seafood available will always be direct from the award winning restaurant's own supply.

It's Barramundi time. Great supplies of fresh salt water barramundi after the worst of the wet. They are even visible at night time in the marinas around Airlie Beach , cruising around the lights. Also a great start to the mud crab season with plenty of large and extra large muddies, full and delish!
The constant wind has made reef fish a bit harder to get but some around and the new season Banana Prawns are just starting to show. Still a bit small at 30/40 grade but these will grow quickly and by end of March should be 10/20 size and great eating.

The majority of product will come vacuum packed and if preferred can be deboned and portion cut in our kitchens.

Fish

 

Coral trout about this item >

This is widely regarded as the best fish on the reef and always ranks amongst the best in Australia. With a strict catch quota and high international demand as a live fish this has become premium price, but for good reason. We have established a consistent source of filleted and snap frozen at sea, using only 1 commercial boat operating out of Cairns.

$47/kg and due to our supply volumes is well below what you will pay for this quality product in any other supplier. Most suppliers can and do supply an imported fish called coral trout...it is NOT!

Want to really impress? The majority of our Coral Trout fishery is shipped live to Hong Kong. We have a ready supply of live trout in Bowen. Our buyer travels to Bowen to select, dispatch and pack. We have to meet the market for these fish but indicative we usually pay in the range of $35/kg whole weight. This can be supplied as whole fish (ideal) or we can fillet and skin. The fillet weight is generally half the whole weight putting the fillet price around $70/kg. This is a great fish to impress by slow cooking on a BBQ or baked with ginger and soy.

Barramundi about this item >

We ONLY use wild caught salt water fish. You will understand why when you try our "Barra". This is local supply and fresh not frozen for most of the year. During the closed season from November to February we use frozen fillet sourced in NQ. We never use farmed or imported product and never use fresh water fish. All "Baby Barra" are fish farmed so we don't supply these. We hand select our fish in the 4 to 10kg range which offer superb thick juicy cuts. This is a fine grained and superbly flavoured NQ favourite. New season local saltwater barra now in stock with fresh supplies on a daily basis.

Spanish Mackerel about this item >

NQ's "Fish & Chips". This replaces "Flake" as the fish of choice for better fish and chip shops in Queensland. White, flaky, boneless. Great fried in a beer batter or cut into large steaks. A BBQ'd Mackerel steak is a true Queensland delight, cooked hot and hard to seal in the moisture. This is a flavour strong enough to carry a range of spices and is a firm enough fish to use in a curry, risotto or pasta. We serve this, literally by the tonne as Cajun spiced fish and as our famous Fish & Chips.

Mud Crabs about this item >

If there is a better seafood experience than a chilli crab, or a cold "Muddy" with fresh bread and a crown larger, we have never had it. We employ a local crabber and usually have a steady, if always in demand, supply. Our Restaurants serve about 100 chilli crabs a week.

We cook crabs daily and can usually supply either fresh cooked or live (for the brave) There are seasonal variations for prices with $40 / kg an indicative average. We even supply bottles of our top secret chilli crab sauce (check out Trip Advisor reviews). Just crack the precooked crab in a wok, pour over the sauce, simmer with a lid on for 10 minutes and serve over rice (with a finger bowl, bib and plenty of serviettes)

Prawns

Our prawns are wild caught not farmed prawns. You will immediately taste the difference.
 

Blue Leg King about this item >

We carry a fresh cooked local king prawns called a "Blue Leg King". This is generally a 10/20 grade (which means between 10 and 20 prawns to the pound€old fishing habit that it is still graded in pounds) To the average person this means they are "medium" size. These are snap frozen at sea and then thawed and cooked, as opposed to cooked and then frozen. There is a great textural and flavour difference. There is some seasonality in this price but currently $32/kg

Green Tigers Prawns. about this item >

These are for the BBQ, not the boiling pot. Premium grade U10 (under 10/pound). On average these are 75 to 100 grams each. Peel these, marinate with some garlic and chilli and throw them on a BBQ or into a hot wok.
    U10 grade. Approx. $38 per kg

 

Peeled prawn cutlets about this item >

Of a grade called 16/20. A "largish" peeled a deveined prawn cutlet. Great for a stir fry, pasta or risotto and THE prawn for battered or crumbed prawn cutlets. These are one of the few imported product lines we supply but do supply local wild caught when we can get them.
    16/20 grade. Approx. $36 per kg

 

Banana Prawns about this item >

Great sweet local inshore prawn. Pale in colour and softer shelled, these are arguably our favourite "eating" prawns . Usually peak Feb to June.
    15/20 grade. Approx. $26 per kg

 

Oysters

 

LL Pacific about this item >

These are a very large pacific oyster that we source from both SA and NZ. Some find these too large and creamy as a natural oyster. They are great for Kilpatricks or BBQ'd with garlic butter as they retain their size during cooking but lose the creaminess some find too much.

Island orders: All orders are packed on day of delivery and sent to Hamilton Island on Fantasea ferries and must be collected by the orderer. $20 delivery fee per order and an additional shipping charge of $10 per box.

Mainland orders: Delivery prices for the mainland are reduced due to no shipping requirement, these will be built into your quote subject to address
